of the end of Warrior of the Lost World, video above, I laugh every time at "Patrick Swayze as Gandhi."
In Phantom Planet, they comment on the line of jurors. Elizabeth Montgomery, Kate Winslet, and ... somebody else maybe?

I love these kinds of riffs, because they're usually unexpected. My favorites:
Escape 2000 "Eddie Money, no!" - Servo "Lorenzo Lamas in The Gino Vanelli Story." - Mike "Lindsay Buckingham, P.I." - Mike
Mitchell "Orson Bean. He's a cop!" - Crow "They arrested Harlan Ellison!" - Servo
Parts: The Clonus Horror "Larry Dallas is The Saint." - Crow "Lou Rawls is The Equalizer." - Crow

Not exactly an "It's __!" line, but the Robert Shaw jokes about the guy in the bar who looks just like Quint in Riding With Death make me cry with laughter. "Hey...college boy."

I like in Catalina Caper, when they cut to a closeup of the drummer in the band, and Joel quips, "Hey, I'm sixty! Still rockin'..."

"Bianca Jagger!" in It Conquered the World, I think. "David Bowie in a brilliant cameo" from Overdrawn at the Memory Bank. "Data!" from The Mole People.

A few from INVASION OF THE NEPTUNE MEN:
"On the left, John Foster Dulles!" "Jacques Cousteau!" "Pat Paulsen!"
And they sing "Cryyyyying...." over a shot of some guy who vaguely resembles Roy Orbison.

I just watched Soultaker last night, and there's a good one in there: "That's not Natalie, that's Tonya Harding!"
They then went on to make loads of Tonya Harding jokes; like when Natalie was looking at her reflection in a mirror, Crow said, "You're dead, Nancy Kerrigan!" Then there was "Jeff Gilooly did it!" and "The lace on my skate broke!" and "Man, that triple salchow really takes it out of you." And so forth. That chick really did look like Tonya Harding, damn.

Absolutely cracked me up.

From THE PAINTED HILLS, with short BODY CARE & GROOMING:
From Short: "...it's looking like Bruno Hauptmann." "...even Larry Hovis." "...on Lyle Lovett." (NOTE: this may be one of the funniest ones ever.)
From Movie: "When Denver Pyles roamed free!" (also, "The Denver Pyle look was popular that year.") "My name's Tom Wopat." "Kenny Rogers is Moses." "It's Juan Valdez!" "Sol Janizen!" (Not sure if this is correct, but they were referring to Pilot Pete....anyone know?) "I'm turning into Victor French!" "Leon Trotsky in the Action-Adventure you thought he'd never make!" "Tyrone Power has a sleepless night." "Hey, he's turning into Michael McDonald!" "Alex Trebek, no!" "Grizzly Adams."
And there's a whole host segment about famous people who look like the bearded prospectors in the movie, wherein Crow gives us a history lesson about Rutherford B. Hayes. Also mentioned here as doppelgangers are Aristotle and The Smith Brothers. And of course, Hayes is referenced a few times during the movie.

From Skydivers"Look! Amon Goeth on guitar!" Absolutely cracked me up. Oh, that's got to be one of the best ones ever! It's so, so perfect. From the same episode, when there's a cut to a guy who resembles Patrick Stewart, they say "Make it so." Like that one, too.

From Skydivers"Look! Amon Goeth on guitar!" Absolutely cracked me up. Is he saying Amon Goeth or George Herman Ruth? I'm confused?

In Laserblast, when the spooky dude is walking through the desert at the beginning:
"Trent Reznor runs out of gas."

In the Century 21 Calling short, a little blond-haired boy walks past onscreen and Servo says "A young Mike Nelson attends the fair!" and Mike laughs and waves at the kid.
"Sting, Debbie Reynolds, and God!" from Space Mutiny is a favorite. I also like when they compared the Master to Freddie Mercury in Manos. When I saw Manos for the first time, I made the same riff early in the movie, so I was all excited that the Brains and I were on the same wavelength LOL.
At the beginning of Final Sacrifice, when you see the evil-smiling guy in the mod 60s-looking suit, I think it's Servo who says "Ray Davies?" As a huge Kinks fan, I loved that line!
