"Summer Madness" by Kool and the Gang Good one. This song will never get old for me. Trivia: The original Rollerball and Rocky were unable to have this song as mood pieces for the soundtracks, so Andre Previn and Bill Conti, respectively, had to make their own Moog based slow burn funk tracks which ripped this song almost note for note. "Give Me The Night" by George Benson is another one.

Back in high school, we used to cruise the neighborhoods with the following:
"Fire" Jimi Hendrix. A great riff that sets the tone for the evening.
"Surprise, You're Dead" Faith No More. You need a fun, fast song with which to bounce around the car.
Anything from Operation:Mindcrime or Empire by Queensryche. I was in high school in 1991, what of it?
Now, my tastes are a bit different.
"Drive" by the Cars. We discussed this song in another thread recently, but it is a great moody song for a night drive.
"Corpus Christi Carol" by Jeff Buckley. I know everyone's sick of hearing me go on about Buckley, but I've gone back to this song repeatedly while driving- especially at night. Haunting and beautiful.

#1 overall for me is Flirting With Disaster, like Broadsword mentioned, then The Breeze (Lynyrd Skynyrd) and Jessica (The Allman Brothers), but at night my favorite is Big Log, by Robert Plant.
