Okay no surprise from me here with the ones that I'll mention, but they are definitely worth seeing.
Fleetwood Mac Documentary And Live Concert (1981) - Unfortunately this documentary is out of print and only available on VHS, but if you can find it, get it. It covers the band working on their follow-up to the Rumours album, Tusk. We get to see the inner workings of how Lindsey Buckingham works within the band, particularly with Stevie Nicks. We also get to see Fleetwood Mac still at the peak of their popularity.
Mick Fleetwood - The Visitor (1982) - I love this documentary. It's interesting to see Mick along with George Hawkins, Jr. and Todd Sharp working with and integrating rock 'n roll with traditional Ghanan instruments, choirs, etc. It's a real shame that this is only available on Laserdisk because it's not only a good look into what is a vastly underrated album, but it's a great look into Ghanan music and musicians.
Christine McVie - The Video Documetary (1983) - Again, this is an out of print doc that was only released on VHS. I have posted the entire thing on YouTube though so if you're interested, go check it out. This documentary doesn't go as in depth into the making of her 1984 self-titled album, but it's interesting to hear Christine's insight about her role in and out of Fleetwood Mac.
Fleetwood Mac - Destiny Rules (2004) - This documentary is centered around the making of Fleetwood Mac's 2004 album Say You Will. It is definitely the most in depth documentary of the four I've listed because we see arguing within the band while the album is being put together. We see important decisions that are made in terms of who will release the record, who will mix the album and if it would be a two cd or one cd release. Best of all, it's still in print and is on DVD.

when i still had netflix, i rented the documentary Britpop! which was good, though i do wish they had interviewed some more people. there were the expected group: the gallaghers, damon albarn, jarvis cocker.
i saw a documentary on vh1 (or vh1 classic?) about punk and the punk scene in 1978 (i think it was? '78 or '77) with the new york city blackout and everything. it was really good.
