I watched the first three Resident Evil movies over the weekend (stuck in a hotel). YouTube had them all, plus the commentary audio for the first and some blooper reels. As expected, they were laughable schlock, though it was kind of interesting to see what they kept from the games and how they reinterpreted Umbrella lore.
It might have partly been the wine, but I found myself laughing like a loon at the commentary track. Participants included director Paul W.S. Anderson, Milla Jovovich, Michelle Rodriguez, and producer Jeremy Bolt. There was some discussion about the actual filmmaking, but also a great deal of fun-poking at events on the screen - at times crossing over into outright ridicule, but mostly just friendly joking.
There was a scene toward the end where the character of Matt Addison is wading desperately through water to a door, which he then struggles to get open; by this point, Milla and Michelle have established that the actor (Eric Mabius) reeeeally loves yogurt, and they've joked that his motivation for scenes always revolves around yogurt. Just as he arrives at the door Michelle simply says, "Yogurt?" and all four of them explode into laughter. It's a glorious, bonafide riff.
That in turn reminded me of the Evil Dead II commentary, which I first heard over a decade ago and rank at or near the top. It's one-third awesome information, one-third banter, and one-third solid riffing. Raimi, Campbell, Spiegel, and Nicotero take advantage of the movie's famously absurd visuals to deliver a performance of which any MSTie could be proud.
What are some other movies with similarly amusing commentary tracks?

The Evil Dead II commentary is a must listen even if you hate the movie.

I love commentary tracks.
All of Kevin Smiths tracks are kind of like that (he even did one for Roadhouse). All the John Carpenter tracks he's done with Kurt Russell have a fair amount of laughs in them. I also listened to the track done for Friday the 13th Part 5: A New Beginning and the director comes off as an often times humorous wacko. In any of the ones I've mentioned, there's a fair number of cracks made about whats going on in the movie, as well as other kinds of antics.
Oh, and the Total Recall track, by Schwarzenegger and director Paul Verhoeven, features one of the funniest lines I've ever heard in a commentary. As the film begins with the Tri Star Pictures logo (featuring a galloping, winged horse), The Terminator himself quips "Hello, I'm Arnold Schwarzenegger, and this is me running towards the screen right here).
I thought it was funny anyway.

The Ghostbusters commentary track actually has them in theater seats with a shadowrama effect.

The Ghostbusters commentary track actually has them in theater seats with a shadowrama effect. Yeah, but they didn't put that on the Blu-ray. They just featured audio, so if you want to see it, you need to pick of the first DVD release. But I totally nerded out when I saw that.
