Dating myself, here's a few:
Frankenstein Jr. and The Impossibles The New Adventures of Pinocchio (Rankin Bass) The Wizard Of Oz (Rankin Bass) Roger Ramjet The Herculoids Birdman Tennessee Tuxedo Bullwinkle and Rocky H.R. Puffinstuff (Witchypoo was a riot) Fat Albert and the Cosby Kids (Hey Hey Hey!)
The funny thing is, I used to watch The Archie Show and Archie's TV Funhouse and I got the DVD's for those shows real cheap and I sat down to watch them and I thought "wow I used to like this stuff?" Some things do not age well.
My Roger Ramjet DVDs never disappoint as the humour was created for adults as much as it was for kids.
I think the cartoons today are so much better written and geared toward everyone in the family. With my girls growing up I enjoyed:

And now one of my girls bought the Adventure Time First Season DVDs and I'm liking that as well.

Believe it or not, I still consider Bugs Bunny and his entire entourage the greatest collection of cartoons ever. Tex Avery's stuff, too.
That said, growing up, the only cartoon that really made my day and I tried to never miss one was He-Man and the Masters of the Universe.
I had the toys and when they released the toon, I was in heaven. Or whatever heaven is to ~10 year old boys circa 1982-1983

I watched:
Bugs Bunny The Flintstones The Jetsons Josie and the Pussycats (saw that on some retro station, NOT Retro though, and it definitely has NOT aged well) Scooby-Doo Rocky and Bullwinkle (and all those offshoots from the same creators or whatever - was it Jay Ward? - Underdog, those Gophers, Dudley Doright, Fractured Fairytales, Courageous Cat and Minute Mouse, etc.). The Archies Battle of the Planets Starblazers Mighty Mouse All the Sid and Marty Kroft stuff (were they on drugs?)
when I was a bit older:
Dungeons and Dragons I LOVED Duckula Fraggle Rock there was some other one, but I can't think of the name, where they were on this boat, I can't even remember the premise of the dang thing - I think one guy was a prince, and some other guy was like half animal or something, I don't even know how to look that one up online since I don't know what to search for (that's helpful, isn't it?)
there's tons more that I can't think of right now
Now I watch Home Movies and Venture Brothers (occasionally South Park and Family Guy, and of course The Simpsons, but that sparingly because I'm sick of it).
Ooh - I remember the Groovy Ghoulies and Sabrina the Teenaged Witch (that was always paired with the Archies), and Wacky Races or something like that. I also watched He-Man on occasion. (I think I was older when that came out, not really a kid anymore, maybe an older teenager).

Quick correction, but Jay Ward had nothing to do with Underdog, Courageous Cat(That one was Bob Kane), or any show involving gophers. The reason for the mix up is that sometimes those shows were paired up in anthology series like "Dudley do Right and Friends".
I might as well separate the shows I liked by points in time in my life. It makes things more organized for me.
Kindergarten -TMNT87 -Inspector Gadget -Heathcliff and the Cadillac Cats -The Real Ghostbusters -Grimm's Fairy Tales(The Anime ones that used to air on Nick Jr) -David the Gnome -GI Joe -The Super Mario Super Show(And yes I remember Club Mario. Even as a kid I thought it was stupid.)
Elementary School -All the Nicktoons(At least until Rocket Power came out. That show sucked) -Rocky and Bullwinkle -Underdog -X-Men -Spider-Man(94) -The Simpsons(I feel fortunate to grow up when the show was in it's prime.) -The Adventures of Sonic(I know most people prefer SonicSatAM, but it wasn't my thing) -Animaniacs -Beavis and Butthead(Much to my parent's dismay)
Middle School -Pokemon -South Park -Dragon Ball Z -Sailor Moon -Histeria -Futurama -King of the Hill -The PJs(anyone remember this show?)

i really loved eureeka's castle when i was a wee one - wish they'd come out with it on dvd for my kids. i was a bit older when "hey arnold" came out but i really enjoyed it as well.

I'm gonna get this out there right now: I love cartoons. Always have, always will. I love cartoons targeted to kids and cartoons targeted to adults. I love cartoons. My favorite TV show on right now is Adventure Time - and I'd just like to say that I think we're in a really great time for cartoons series in the US: Phineas and Ferb, Regular Show, Archer, Venture Bros. (when it comes back from the usual two years between seasons), Gravity Falls, Scooby Doo Mystery Inc. (the first really great Scooby Show since the original), and the aforementioned Adventure Time.
...and no, I'm not watching Korra. Never been much of a Nick person. Yes, I should probably rectify it.
Anyway, favorite shows as a kid... well, if I list that as from age 0-12 the favorite cartoons were
Looney Tunes Black & White Popeye Tex Avery's MGM stuff The New Adventure of Winnie the Pooh Darkwing Duck The Flintstones Space Ghost Coast to Coast Top Cat Batman: The Animated Series Swat Katz Two Stupid Dogs Dexter's Lab Johnny Bravo The What a Cartoon Show Rocky and Bullwinkle George of the Jungle Freakazoid! ...hmmm, those last three probably bleed into age 13 or so when I saw them (technically, then a teen, not a kid)

I was a big Ninja Turtles fan as a kid, but it was really due to the live action movies and not the cartoon show, which I actually didn't watch that often.
*currently watching Sherlock Hound and Star Blazers via official online streaming 'cause there haven't been many current anime that have grabbed me so's I'm goin' back to classic stuff. ;D
------- Edit: How could I have forgot Johnny Quest, Huckleberry Hound, Yogi Bear, Animaniacs, and Tiny Toons?

Yeah, pretty much all my favorites have been mentioned already. (Yes, I'll even include the New Adventures of Winnie the Pooh there.)
I think most of the ones that have aged the best are the Steven Spielberg Presents cartoons (especially Pinky & The Brain and Freakazoid), Batman the Animated Series, and, of course, Sonic the Hedgehog (SatAM.)

Beakman's world was also a show I enjoyed. Lester the rat reminds me of a Kevin Murphy character.
