Miss anything?
Has anyone heard if theres any plans to re-release the sets remastered, or original but on bluray? I mean the first re-releaaes started almost 6 years ago.

There'd really be no reason to release the originals on Blu-ray. And there's nothing to remaster. Its all on tape. Digibeta tape, to be exact, resolution is only 720x486, DVD quality. Which they've already been released on. And only Seasons 8-10 were shot on Digibeta, everything else was shot BetaSP which had a lower resolution and later transferred to Digibeta masters. So those are the best you're ever going to get.

Classic MST3K Episodes on Blu-ray:
Earth vs. the Spider Hercules and the Captive Women Eegah The Brain That Wouldn't Die The Mole People The Deadly Mantis The Screaming Skull It Lives By Night
All eight of these episodes were featured as bonus features on Blu-ray discs of their respective films from Scream Factory and Film Detective. The episodes are presented in standard definition, because that is how the show was filmed, and in some cases the DVD transfers on previous releases are much better.

I don’t think you could do a new sound mix, because their aren’t separate elements to work with. The tape is what there is. Upscaling would look terrible given the source material.
In theory you could separate out the audio and put it over a pristine print of the films, but then the host segments would comparatively look like crap, and some jokes from the films commenting on the poor film quality wouldn’t make sense, and the audio commentary would probably be diminished because it would just be a copy of what’s on the tape.

Based on the market research which has been widely accepted by all the distributors, the US market isn't interested in upscaled SD TV content on blu-ray. At this point, the primary buyers of blu-rays get upset if the source material is "only" a 2k master. An SD master would be a non-starter.
It's certainly possible that MST3k would prove to be an exception. But somebody would have to make an investment in doing a quality upscale job before they could even test the waters. And it seems as if Joel is far more interested in looking forward than backward.
If you want HD upscales of MST3k, it's gonna be a DYI fan project that somebody does (or somebodies).

Shout can barely transfer the current tapes to DVD quality, and frequently forgets standard extras like MST Hour wraps, it would be stretch for them to do upscales.

A while back there was a board user that was trying to convince us that a sort of HD reconstruction of the episodes was possible by using HD prints of the films then overlapping some sharper silhouettes over the top, I think upscaling the host segments.
It seemed like a lot of work to gain so little, and using a completely new print of the movie can often ruin entire episodes that utilize riffs at the expense of the film print, unless someone wanted to digitally recreate flaws for some reason.
I think it's better to just accept that HD masters of the series won't work for various reasons. And the film elements were created with SD in mind, so we'd really be working against the grain to even try.

I think back to 207-Wild Rebels. In the standard VHS copies, the film's credits are totally unreadable. They even make riffs about them "Eddie Glaucoma". When the DVD came out, those credits were readable. Totally clear. It ruined the joke. That's a rare example of just a basic raise in resolution messes up the show. I can't imagine what Blu-Ray quality would do.

Didn't someone do this on Youtube? And get taken down for it?

Not exactly, the thing that was on Youtube used commercial HD releases and MST3k audio to create a composite thing.
That said, I wouldn't recommend Youtube as the best place to do that anyway. If you are trying to make an upscale look good, posting it on a site that will definitely make the picture look worse seems counter-productive to me.
