Has anyone seen Gamera vs. Giger or Gamera vs. Viras? Why do you think BBI never riffed them?

I haven't seen them but I've read about them in the Temple of Gamera. Probably, the cast thought they had done enough Gamera movies for one lifetime.

I've seen them. G vs Jiger is an alright film. Plenty of action of the monster suited variety. Just watch out for the exposition portion of the film where the typical scientist explains how Gamera has been infected by Jiger (hint: it involves elephant parasitic pathology) Ugh. Viras contains a boatload of recylced footage from Gamera, G vs. Barugon and G vs. Gaos (the three movies that preceded it).
If I understand the whole Sandy Frank thing (Sandy Frank, Sandy Frank, he's the source of all our pain...), Mr. Frank purchased the American rights to the movies that BBI did in the show (Gamera, vs. Barugon, vs. Gaos, vs. Guiron, and vs. Zigra) but not for these two movies. Hence the absence of Viras and Jiger from the show.

I remember in Gamera vs. Guiron where the alien women ask Tom and Akio about Gamera, and we see flashbacks, that there are some scenes from what I gather were from one of the un-mystied Gamera's, and Servo says something to the affect of "Oh, never seen this." I just felt like adding that.

Let's just wait for MonsterX to show up. He'll have plenty to say.
