So I bought a pumpkin for decorating purposes. Maybe I'll take a picture.
I also bought it because I love roasted pumpkin seeds.
I saw a recipe that said to biol the seeds in salted water for ten minutes first. So i did.
Dried them out on paper towels, put them on a cookie sheet with some olive oil, some more salt (and pepper) then baked at 350 for about 20 minutes.
Mmmmm. So much better than those salt-bombs you see at the convenience store.
Then I went back to the pumpkin patch and asked if I could take their "reject" pumpkins for free. Now I have 5 more punkins' to disect...

i saved a pumpkin from the pumpkin orphanage (in the parking lot at walmart), but i don't plan on carving it up. i'm not allowed to have knives anymore. plus, i'd probably lose a finger in the process.
but i loooove roasted pumpkin seeds. i'm too lazy to get them the way you did, but they sounded awesome.

I just made another batch...
This time I let them marinate for 24 hours, in a mixture of olive oil, brown sugar, regular sugar, ground red pepper and garlic powder.
They roasted to a very dark color, and are reminicient of a good, spicy bar-be-que chip.

I used to carve pumpkins every Halloween, but then got turned off by the mess and the stink after a couple of days in the Southern heat. I just use the ceramic or plastic one's for decoration now.
